Id personally reduce the volume a lot, and stick to the compound movements more as these are more specific and are better choices purely because they teach coordination.
Give this a try
Say on the bench have someone spot you for 1 rep at 110% of your 1rpm. Have a quick break then bang out 10 - 15 very fast reps at around 50%of your 1 rpm.
This should improve your punching speed.

This is coming from someone that doesnt know jack shit about fighting or martial arts so if its bollocks im sorry.:)

some one told me behind the neck presses were bad for u (on here).

ok cheers for the advice lads :) .... i was thinking of juicing next year, it would mean i would have to stop competing but i think it may b worth it?

i stopped reading after your chest/tris.
definitely reduce the volume. stick to the big basics/ compound movements. 2 hrs of jeet kune do, i will bet you hit alot of ab work. so you can lighten up a bit in the gym on the abs. maybe throw some twisting presses with a cable to strengthen your core muscles and increase your trunk torque. it can only help your training for jkd.
