Pretty much post 2 explains it. An true chef will tell you that gas is better. It allows you to change the cooking temp fast at any time, the heat is more evenly distributed, and you just have more control all around. It takes some time getting used to ti though if you have always used electric
One way to make it easy for you (only if you feel like buying them).They sell these cool new pots and pains. The have 3 circles in the middle of the pan each on bigger then the other.
When the pot or pain reaches low eat the first rig turns red in the middle. hen it reaches med heat the second ring fills up and turns red. Same gos for the 3rd ring when the pain reaches hot the 3rd ring turns red.
If the pain gos to far above the normal cooking range there is a forth ring that turns a different collar but I forget what.
The pans are mad from Infused anodized aluminum. Pretty good for cooking just about anything.
