Elk, caribou, moose are all pretty good. Bear is shit though.

the diet of wild antelope is almost entirely sage brush...so, wild antelope has a very HEAVY sage flavor...if you like sage, it tastes good...if you don't like sage, it tastes like shit

now...if you are talking about some sort of farm raised antelope?? i've never eaten it and can't comment.

i can only speak for wild alaskan caribou...and, like wild antelope, their diet isn't particularly multi-dimensional...a significant portion of it consists of lichens (a symbiotic combination of fungus and algae that grows on rocks and shit) and, as with antelope, caribou taste a lot like what they eat...and, from what i can tell, lichens tastes like ass...and not good ass, either.
