Soy Protein Isolate

Yeah I was just thinking about the carbs, maybe it will be a little oat overload! I will go with the Almond route I think. Anyway, thanks for your help and advice, I won't drag this post thread on any further - lesson learnt! ;)

Ok, here it is!


Raw Vanilla Almond Milk

1 cup raw almonds
(Soak in a bowl in the refrigerator overnight and rinse before using)
4 cups water
1 vanilla bean, seeds scooped out
3-5 soft pitted dates (soak Medjool dates in water for 1/2 hour) or
other sweetener to taste such as stevia or agave.

Blend the soaked almonds with the water until smooth. Then strain the mixture through a sprout bag, cheesecloth, or vegetable bag into a big bowl. Save the almond pulp in a container and put in the refrigerator for later use.

Put the almond milk back into the blender carafe and blend in the vanilla seeds and dates or other sweetener until smooth. This milk will last in the refrigerator for about 3-5 days. Shake well before using. Variation: Blend in a banana and use a pinch of nutmeg to make a festive rawnog.

As you know, I agree with you on this.

I also would touch it to save my life. I learned how bad it was in nutrition school and I was horrified at how it's processed and so on. I'm lactose intolerant and had switched to soy as an alternative. I won't bore anyone with details and the side effects I had, and didn't know what it was.

And yes, dairy is just as bad. Try almond milk it taste good and it's healthier. You can make it yourself. Very easy!

The danger of soy

The excess soy production and its protein residue was the motivation for the multi-million dollars spent on advertising and intense lobbying of the Food and Drug Administration (FDA), which resulted in about 74 percent of U.S. consumers believing that soy products are healthy. However, lactose intolerance is becoming a health concern recognised by the medical profession; accordingly, soy is becoming very popular as an alternative to dairy.

For greater clarity, soy products are classified into two main groups: fermented and unfermented. There are also another two sub-groups: organic and Genetically Modified (GM). The GM soy is to be avoided at all costs, as the hazards of GM are some of the worst innovations of modern day bio-technology.

The unfermented soy category is a most problematic one. It includes soy products, such as tofu, bean curd, all soy milks, soy infant formulae, soy protein powders and soy meat alternatives, such as soy sausages/veggie burgers, made from hydrolysed soy powder.

Soy belongs to the family of legumes. Other members of the legume family include beans - such as adzuki, red kidney, navy, barlotti, etc., as well as chickpeas. Peanuts are included as well, as they are technically not a nut but a legume. All legumes and whole-grains - such as, rice, barley, oats, wheat and rye - contain amounts of phytic acid. Being a legume, soy contains a high amount of phytic acid. So, what's wrong with phytic acid? A number of things - yet, in some cases, phytic acid can also be beneficial.

Phytic acid's structure gives it the ability to bind minerals, proteins and starch, and results in lower absorption of these substances. Hence, phytic acid, in large amounts, can block the uptake of essential minerals, like calcium, magnesium, copper, iron, and especially zinc in the intestinal tract. Soy also inhibits the uptake of one of the most important minerals needed for growth and metabolism, iodine, which is used by the thyroid gland in the production of thyroid hormones.

Since a large percentage of non-vegetarian adult males have excess iron, phytic acid would be helpful to them by binding the excess iron. But we need to bear in mind phytic acid will simultaneously bind other minerals, such as calcium, magnesium and zinc. In the case of children and menstruating women, the phytic acid in soy can be a serious negative, as women and children need iron. In women, iron is needed to replace the loss during their menses and in children iron is required for growth and development.

Apart from the phytic acid-related phenomena, there are additional factors that make soy an unhealthy choice.

Soy:

* contributes to thyroid disorder, especially in women

* promotes kidney stones

* weakens the immune system

* contributes to food allergies and digestive intolerance

Perhaps the most disturbing of soy's ill effects on health has to do with its phytoestrogens, which can mimic the effects of the female hormone, oestrogen. These phytoestrogens have been found to have adverse effects on various human tissues, and drinking only two glasses of soy milk daily for one month has enough of the chemical to alter a woman's menstrual cycle.

Soy is particularly problematic for infants and it would be very wise to avoid giving them soy-derived products, since it has been estimated that infants who are exclusively fed soy formula receive the equivalent of five birth control pills worth of oestrogen every day. Check out (Weston A. Price Foundation) to find some alarming research and statistics on what can go wrong when infants and children are regularly fed soy formula.

In order to derive some benefit from soy, consuming only fermented soy products - such as organic miso (mugi barley and genmai miso are the best), organic tempeh, soy sauce or tamari and natto - is the way to do it. This is because the phytic acid, which is inherent in soy beans, has been neutralized in the process of fermentation. Consuming fermented soy is very beneficial in recolonizing the friendly bacteria in the large intestine, which neutralizes the 'unfriendly' bacteria and allows for greater general assimilation of foods and nutrients.

So, fermented soy is of benefit and unfermented soy is not. It is not only soy that needs to be fermented but whole-grains as well. In fact, grains (apart from millet, buckwheat and couscous) and legumes are best consumed after soaking them for 48-72 hours prior to cooking, which allows fermentation to take place. The soaking of grains and beans is also advocated in the principles of macrobiotics, which is very popular amongst vegetarians.

Another common fallacy is that soy foods couldn't possibly have a downside because Asian cultures eat large quantities of soy every day and consequently remain free of most western diseases. In reality, the people of China, Japan and other Asian countries eat very little soy. The soy industry's own figures show that soy consumption in China, Indonesia, Korea, Japan and Taiwan ranges from 10 to 90 grams per day. That is grams of soy food, not grams of soy protein alone. Compare this with a cup of tofu (250 grams) or soy milk (240 grams). Many Americans and Australians today would be consuming a cup of tofu and a couple of glasses of soy milk every day. They might also add veggie burgers to this, thinking they are getting their much needed protein intake. Infants on soy formula are probably the most disadvantaged, as that is their main source of nutrition and they ingest large amounts of soy relative to their body weight. Often the side effects are not noticed but, as they are growing up, runny noses, frequent colds, irritability, severe sugar cravings and food intolerance develop.

The summary below outlines the adverse effects of unfermented soy products:

* Trypsin inhibitors in soy interfere with protein digestion and may cause pancreatic disorders. In test animals soy containing trypsin inhibitors caused stunted growth.

* Soy phytoestrogens disrupt endocrine function and have the potential to cause infertility and to promote breast cancer in adult women.

* Soy phytoestrogens are potent anti-thyroid agents that cause hypothyroidism and may cause thyroid cancer. In infants, consumption of soy formula has been linked to autoimmune thyroid disease.
Vitamin B12 analogs in soy are not absorbed and actually increase the body's requirement for B12.
Soy foods increase the body's requirement for vitamin D.

* Fragile proteins are denatured during high temperature processing to make soy protein isolate and textured vegetable protein.

* Free glutamic acid or MSG, a potent neurotoxin, is formed during soy food processing and additional amounts are added to many soy foods.

* Soy foods contain high levels of aluminum which is toxic to the nervous system and the kidneys.

In contrast, consuming organic fermented soy products can be quite beneficial. Consuming even small amounts of unfermented soy on a regular basis could cause some adverse effects in our body. Next time you consider drinking soy milk; perhaps instead consider almond milk, oat milk, coconut milk or goat's milk. Some people who are allergic to dairy can tolerate goat milk and goat cheese products in small quantities. Replacing soy and regular milk with these alternatives allow us to enjoy our beverages and cereals without harming our health.

The Dangers of Cow's Milk

Today, many of the problems parents have with their babies are linked to new parenting and feeding techniques that have been implemented during the recent century. Colic, for instance, is far more common in the U.S. than in many other places around the world. Two chief causes for its rise are the stress suffered by babies being regularly separated from their mothers, and the common difficulties babies have tolerating the large cow's milk proteins in infant formulas and breastfeeding mothers' diets. Cow's milk is a foreign substance that has pervaded every corner of our diets—starting with artificial infant feeds, but finding its way into mother's breastmilk through the foods she eats as well. As it turns out, health problems such as childhood diabetes, obesity, bowel disease, osteoporosis, heart disease, cataracts, colic, ear infections, chronic headaches due to mucus accumulation, phlegm, hyperactivity, and cancer, on the rise in both children and adults, are strongly linked to infant feeding choices.

While there are literally thousands of research studies, each revealing at least one of milk's hazards, the dairy industry goes to great lengths to stifle any damaging rumors. Blanket statements, such as, "There is simply no scientific research to back up these claims," are easily made. With a long and successful history of dairy promotion, these are readily accepted by the public. More people need to go to the real research and learn the truth for themselves. They should be very suspicious of these foreign foods being pushed on their children. They should question motives as well as possible outcomes. Although some of the dangers of cow's milk consumption relate more to adults than to children, parents' actions form the basis for lifelong dairy-consuming habits in their children.

The harmful components of cow's milk include all the major parts of it, as well as some more minor elements. Lactose is a sugar meant for babies, but it's generally harmful to adults. The proteins in cow's milk are different from human milk proteins and cause problems of digestion, intolerance, impaired absorption of other nutrients, and autoimmune reactions. Few of the proteins meant for baby cows are found naturally in human mother's milk, and none are found in any natural adult human food. Even the high protein content in cow's milk creates problems. Human babies need the saturated fats and cholesterol in mother's milk. Bovine milk fat is not appropriately composed for human babies and is only deleterious to the health of children and adults. Cow hormones are not meant for humans, and older children and adults are not meant to consume hormones. And, cows have been selectively bred over time to create high levels of these hormones—those being the cows that grow the fastest and produce the greatest amount of milk. Cows also concentrate pesticides and pollutants into their milk fat, from their high dietary food and water requirements. The high amount of drugs now given to cows adds to this chemical soup. But we need milk to build strong bones, don't we? Actually, heavy milk consumption leads to increased osteoporosis.

Deflating Dairy

The highly promoted idea that milk builds strong bones refers to the prevention of osteoporosis—this is the reason for strengthening bones. Decades of effort to demonstrate that high calcium diets chiefly derived from dairy products build strong bones have failed to prove any such correlation. In fact, the opposite seems to be true. 1. It appears that high calcium intake before puberty, and especially in young childhood, may have some slight positive effect on bones, but this diet is not the answer. A balanced intake of all the bone minerals, along with adequate vitamin A, C, and D, is what is truly needed. (I TELL THIS TO ALL MY CLIENTS, BUT MOST WOMEN CONTINUES TO THINK THEY NEED MORE CALCIUM)

A balanced intake of minerals cannot occur when the diet emphasizes dairy. Dairy's high calcium causes relative deficiencies in magnesium and other bone-building minerals, and its high phosphorus and animal protein reduces calcium availability. Physical activity has the greatest benefit—the body efficiently uses what is available to build strong bones when it senses the need. Human milk and vegetable sources are superior to dairy for calcium and other nutrients in many ways. There are fewer nutritional or other health advantages to giving cow's milk to children than is generally believed, while there are certainly many risks.

Almost every day another health research finding is made about whole grains, soy, a serving of vegetables, two fruits per day, cashews, legumes, fish, or some other food, other than milk that is, and their connection to a reduced risk of heart disease, breast cancer, stroke, diabetes, or other disease. This is because cow's milk and its derivatives today make up one-third of the adult diet, and half to two-thirds of caloric intake in children, thus replacing so much other important, nutritious food needed in the diet. This leads to insufficient intake of important vitamins, several minerals, and healthy fiber and vegetable oils. Cancer-preventing antioxidants in foods are missing in this milk diet as well. While one form of antioxidant vitamin A is added to milk (but not all dairy products), it is likely counteracted by the pesticide and drug residues. The full complement of vitamin A and associated enzymes, found in vegetables and other foods, are required for cancer prevention. Many, many more kinds of antioxidants are found in vegetables, legumes, fruits, and grains.

No other animal in the animal kingdom drinks milk beyond childhood. No other animal suffers from osteoporosis, except the occasional pet raised on human meals.

If there remains a desire to provide milk to a child who has no diarrhea, rashes, or other intolerance reactions, organic (organic—not raw) non-fat milk would be the best choice. In raw (unpasteurized) milk there can be many potentially dangerous microorganisms, in addition to the leukemia virus. In organic milk there are fewer antibiotic residues, no added hormones, and cows are given better feeds. Non-fat means less chemical residue and no artery-damaging saturated fat. Children can obtain fat in the form of non-hydrogenated (especially monosaturated) vegetable oils, be it in potato chips or cashews. Goat's milk is considered by many to be superior in many ways, and today low-fat versions are available. Much less documented information is available about goat's milk, but it appears that the proteins are less problematic for digestion, although allergic intolerance to these can also occur. Lactose and hormones would remain an issue although, to date, goats apparently are not injected with extra growth hormone.

Although it was apparent from day one that formula was a health risk for infants, back when it was first promoted, cow's milk for older children appeared to be a nutritional manna. And with one or two glasses a day from a healthy, range-fed animal, it likely nearly was. Since this time, however, the quality of dairy has drastically reduced while its consumption has exploded... with a little advertising help. The evidence suggesting that the early faith in milk was misplaced has been building up for decades. The dairy industry has had to take increasingly extreme efforts to keep this information out of public awareness.

I have only touched on the tip of the existing evidence against the health claims of the milk industry promoters. Since our childhood, the dairy industry has worked hard to have dairy products enshrined in a food group of their own. Even though they were given their own space in the new Eating Right food pyramid, they found themselves placed in a small upper portion and have lobbied to have the pyramid withdrawn.2 Many nutrition experts such as Harvard's Dr. Walter Willett. 3 suggest they should not be a featured group in the pyramid at all. The dairy industry has also successfully convinced many vegetarians that milk from cows, especially cheese, is a vegetarian food. Since few substantiated health claims can be made anymore, the milk industry's most recent promotion has been to simply show their product on the upper lip of celebrities of all kinds, even those who are dairy-allergic (Bill Clinton), and even on those who are too young to be consuming whole milk (the Rugrats).

Knowing and avoiding the potentially harmful effects that high dairy consumption and milk-sensitivity reactions can have on your child is just as important and loving as nursing, close bonding, and informed health care decisions. What we feed our children matters; how we parent them matters. These measures will lead to the best health, comfort and happiness available to a child.

WHAT IS MILK?

Milk is a maternal lactating secretion, a short term nutrient for new-borns. Nothing more, nothing less.

Invariably, the mother of any mammal will provide her milk for a short period of time immediately after birth. When the time comes for 'weaning', the young offspring is introduced to the proper food for that species of mammal. A familiar
example is that of a puppy. The mother nurses the pup for just a few weeks and then rejects the young animal and teaches it to eat solid food. Nursing is provided by nature only for the very youngest of mammals. Of course, it is not possible for animals living in a natural state to continue with the drinking of milk after weaning.

IS ALL MILK THE SAME?

Then there is the matter of where we get our milk. We have settled on the cow because of its docile nature, its size, and its abundant milk supply. Somehow this choice seems 'normal' and blessed by nature, our culture, and our customs. But is it natural? Is it wise to drink the milk of another species of mammal?

Consider for a moment, if it was possible, to drink the milk of a mammal other than a cow, let's say a rat. Or perhaps the milk of a dog would be more to your liking. Possibly some horse milk or cat milk. Do you get the idea? Well, I'm
not serious about this, except to suggest that human milk is for human infants, dogs' milk is for pups, cows' milk is for calves, cats' milk is for kittens, and so forth. Clearly, this is the way nature intends it. Just use your own good
judgement on this one.

Milk is not just milk. The milk of every species of mammal is unique and specifically tailored to the requirements of that animal. For example, cows' milk is very much richer in protein than human milk. Three to four times as much. It has
five to seven times the mineral content. However, it is markedly deficient in essential fatty acids when compared to human mothers' milk. Mothers' milk has six to ten times as much of the essential fatty acids, especially linoleic acid.
(Incidentally, skimmed cow's milk has no linoleic acid). It simply is not designed for humans.

Food is not just food, and milk is not just milk. It is not only the proper amount of food but the proper qualitative composition that is critical for the very best in health and growth. Biochemists and physiologists -and rarely medical
doctors - are gradually learning that foods contain the crucial elements that allow a particular species to develop its unique specializations.

Clearly, our specialization is for advanced neurological development and delicate neuromuscular control. We do not have much need of massive skeletal growth or huge muscle groups as does a calf. Think of the difference between the demands make on the human hand and the demands on a cow's hoof. Human new-borns specifically need critical material for their brains, spinal cord and nerves.

WELL, AT LEAST COW'S MILK IS PURE

Or is it? Fifty years ago an average cow produced 2,000 pounds of milk per year. Today the top producers give 50,000 pounds! How was this accomplished? Drugs, antibiotics, hormones, forced feeding plans and specialized breeding; that's how.

Any lactating mammal excretes toxins through her milk. This includes antibiotics, pesticides, chemicals and hormones. Also, all cows' milk contains blood! The inspectors are simply asked to keep it under certain limits. You may be horrified to learn that the USDA allows milk to contain from one to one and a half million white blood cells per millilitre. (That's only 1/30 of an ounce). If you don't already know this, I'm sorry to tell you that another way to describe white cells where they don't belong would be to call them pus cells. To get to the point, is milk pure or is it a chemical, biological, and bacterial cocktail? Finally, will the Food and Drug Administration (FDA) protect you? The United States General Accounting Office (GAO) tells us that the FDA and the individual States are failing to protect the public from drug residues in milk. Authorities test for only 4 of the 82 drugs in dairy cows.

As you can imagine, the Milk Industry Foundation's spokesman claims it's perfectly safe. Jerome Kozak says, "I still think that milk is the safest product we have."

One nasty subject must be discussed. It seems that cows are forever getting infections around the udder that require ointments and antibiotics. An article from France tells us that when a cow receives penicillin, that penicillin appears
in the milk for from 4 to 7 milkings. Another study from the University of Nevada, Reno tells of cells in 'mastic milk', milk from cows with infected udders. An elaborate analysis of the cell fragments, employing cell cultures, flow
cytometric analysis , and a great deal of high tech stuff. Do you know what the conclusion was? If the cow has mastitis, there is pus in the milk. Sorry, it's in the study, all concealed with language such as "macrophages containing many vacuoles and phagocytosed particles," etc.

IT GETS WORSE

Well, at least human mothers' milk is pure! Sorry. A huge study showed that human breast milk in over 14,000 women had contamination by pesticides! Further, it seems that the sources of the pesticides are meat and--you guessed it--dairy products. Well, why not? These pesticides are concentrated in fat and that's what's in these products. (Of interest, a subgroup of lactating vegetarian mothers had only half the levels of contamination).

There are dozens of studies describing the prompt appearance of cows' milk allergy in children being exclusively breast-fed! The cows' milk allergens simply appear in the mother's milk and are transmitted to the infant.

OTHER PROBLEMS

Let's just mention the problems of bacterial contamination. Salmonella, E. coli, and staphylococcal infections can be traced to milk. In the old days tuberculosis was a major problem and some folks want to go back to those times by insisting on raw milk on the basis that it's "natural." This is insanity! A study from UCLA showed that over a third of all cases of salmonella infection in California, 1980-1983 were traced to raw milk. That'll be a way to revive good old
brucellosis again and I would fear leukemia, too. (More about that later). In England, and Wales where raw milk is still consumed there have been outbreaks of milk-borne diseases. The Journal of the American Medical Association
(251: 483, 1984) reported a multi-state series of infections caused by Yersinia enterocolitica in pasteurised whole milk. This is despite safety precautions.

LEUKEMIA? LYMPHOMA? THIS MAY BE THE WORST--BRACE YOURSELF!

I hate to tell you this, but the bovine leukemia virus is found in more than three of five dairy cows in the United States! This involves about 80% of dairy herds. Unfortunately, when the milk is pooled, a very large percentage of all milk produced is contaminated (90 to 95 per cent). Of course the virus is killed in pasteurisation--if the pasteurisation was done correctly. What if the milk is raw? In a study of randomly collected raw milk samples the bovine leukemia virus was recovered from two-thirds. I sincerely hope that the raw milk dairy herds are carefully monitored when compared to the regular herds. (Science 1981;213:1014).

OTHER CANCERS--DOES IT GET WORSE?

Unfortunately it does. Ovarian cancer--a particularly nasty tumour--was associated with milk consumption by workers at Roswell Park Memorial Institute in Buffalo, New York. Drinking more than one glass of whole milk or equivalent daily gave a woman a 3.1 times risk over non-milk users. They felt that the reduced fat milk products helped reduce the risk. This association has been made repeatedly by numerous investigators.

Wow, thanks so much for all the info Tami and Thandie - and for the great almond milk recipe which I'm going to make right away! I knew alot of the info on cows milk after a half hearted attempt at being a vegan many, many years ago (failed miserably after two weeks because I felt so ill!) but I seriously didn't know that much about soy. I should have really though, especially after 10 years of consuming it and even more so as I am so diligent with what I consume. I guess it's because I started using soy as an alternative to dairy before I started with healthy eating and fitness so it slipped the net somehow. Isn't it disgusting though what is pumped into our foods nowadays and that we really don't know what is going on! I feel quite sad and sick after reading all of that :( On the other hand, I have also learnt that I should be soaking my quinoa before cooking for maximum enzyme release - so there have been many lessons learnt from all of this today :)
