cut cuke in half length wise

i am going to give you a whole bunch
though not encyclopedic
i know lots of food and some times forget a few
if i forgot it i probably don't like it

as for cooking
most green veggies can be eaten raw or cooked
best form of cooking veggies is to lightly steam or stirfry them..minimal nutrient loss
boiling green veggies just leeches out the b vitamins
harder green veggies can be braised...sauteed with a bit of broth to soften
don't forget soups lads and lasses green veggies added at the end to a pot of soup stock makes a great meal...try dashi(japanese broth) with alittle miso and sesame oil

for seasonings i always use lots of garlic sesame oil and tamari but that is me
cook for yourself remember you have to eat it
most cooked veggies are best done simply but one thing to try is adding a tiny pinch of nutmeg esp to broccoli or spinach sweetens it up
as for your gastro distress try adding alittle lemon at the end might help

for guaca i am pretty basic

i dice my avo
add fresh roma tomatoes
chopped serrano chili (a tad hotter than jalapeno)
red onions
cilantro
garlic, fresh of course
lime juice
and a pinch of cumin
i like chunky when it comes to guac

spinach
baby spinach
chinese spinach
sprouts (alfalfa, bean, soy, onion, radish, broccoli, lentil, corn)
snow peas (yum)
sugar snap peas
green beans (but i love yellow and purple too)
bell peppers (love red yellow orange and purple also)
chilis.. jalapeno, serrano, thai, scotch bonnets
napa cabbage
green cabbage
kholrabi
broccolini
chinese broccoli
broccoli
broccoli rabe aka rapini (bitter as hell)
collard greens
mustard greens
kale
bok choy
baby bok choy
romaine
green leaf
tatsoi
mache
butter lettuce
cukes
asparagus (white is okay but fibrous and needs peeling too much work)
winter chinese melons (actually a squash)
chayote
zucchini (not my fav)
brussel sprouts
celery
green onions
leeks



guys gotta try grilled spinach or snow peas
damn fine

wrapping em in foil for bbq-ing is great
try it with a bit of tamari, garlic, ginger and sesame oil

for those that know me i am a chef and food is my profession and passion

i am also descendent from chinese and jamaicans so my food and what i eat is generally skewed that way

re: salsa
as i tell people
recipes and taste is subjective
what i may like you may not

but here ya go

4 ripe large roma tomatoes, diced
1 small red onion, peeled and diced
2 tablespoon extra virgin olive oil
1 large pinch of salt
1 clove garlic mashed and chopped
several grind black pepper
1 small jalapeno or chili of choice (leave seeds out if you want it mild keep em for heat)
1 tablespoon cilanto roughly chopped
1/8 tsp ground cumin
juice one lime or more up to your taste
dash worchestershire sauce


can throw in whatever else you like
some throw in black beans or corn
some like it hotter and move up to thai peppers or scotch bonnets
one thing i love to do is char the tomatoes and onions on the bbq before chopping

and if you like it fine throw everything into your food processor and wiz
i love chunky food i love the texture and being able to see my food but some don't

by the way i am catching up here
not been on line much with a busy week at work
but
i notice a few people mentioned pickles and sauerkraut
while i do eat these once in a while or i add as flavouring agents i am not fond of because of their sodium levels

but you can make your own pickles by buying the smaller pickling cukes (usually found in the spring) and cutting them up and keeping them in vinegar with crushed garlic and some peppercorns and dill seeds in the refrig
after two days good to go keeps for a month in refrig
as for sauerkraut may i suggest kimchee
less sodium but can be rather hot
 
for something alittle different kids
try grilling your romaine briefly before chopping it up for your caeser
pretty tasty
and can used warm bacon dressing instead of caeser with it
good with grilled chicken or shrimp
