Ahhh food ideas, one of my favorite kind of posts.
being both a culinary geek and a CKD enthusiast I have a few good tricks under my belt. Ill post just a few to get you started.
If you want to be succesful on this diet you really need to diversify.. I dont care who you are you wont last if you plan is to eat canned tuna, flax oil, and bacon with mayo for 2 months.
so any way.
the recipes....for all my CKD peoples.
Egg drop soup....with a bit more flavor.
cut up some garlic (very fine) and fry in a nice amount of olive oil.
Add chicken stock just as garlic browns, and bring to a lite boil.
in a seperate bowl mix two eggs (or one depending on the amount of broth you got) with parmesan cheese-any kind of hard italian cheese will do.
and then drop that fucker in and stir around.
Need more fat INIT?
add some very crispy bacon and crumble over top of soup.
this ones a little more advanced but worth it.............
-Chicken rollatini with chipotle sauce
(this dish is good even with out the suace, be warned the sauce has 3 carbs..do you really need to be that anal?)
take normal sized chicken breast (normally they can be quite thick)
-lay breast on cutting board and place hand firmly on top. take a knife and cut into the side of the chiken about half way up and slowly cut through. this will produce to breast from one both nice and thin.
-Have a nice portion of cheese cut up on the side. i prefer muenster or jack.
-roll the chicken into a tube like shape and place cheese in the middle---you can also add a few chipotles or any other kind of chile in here---
-oil the pan up, i prefer olive oil(many Efas).turn heat on high and Make sure the pan is really hot. place chicken in and sear making sure to roll it around and get all sides---the chicken will cook farily quick.
-once the side have all been seared pour in a bit of chicken stock (with onions if you like,nice and diced) reduce heat,and add a small amount of tomato puree and chipotle peepers. cover and let simmer.
