Met a lot of great coonies in my job and damn they can cook. Get a coonie in cold weather and they crank out some great food. lol. 48 hours is a bit long. I cooked 2 whole chickens, slowly, overnight and prepped them before I started the broth. Ever seen a skinny OFT? He is on crank. Ask Scots, we eat well on the rig.
