Newbie needs help with diet!

Hello Guys, I could really use some!

I am 5' 10" and weigh 158 lbs (up from 140 after 4 months of training). I take creatine before every workout (1 tblspoon) with water. And a protein shake after (1 scoop +2 cups of skim milk).

The daily diet thing has me pretty confused as to what I should be doing. I try and eat a couple sandwiches throughout the day, and boiled eggs in between.

My main goals are to gain muscle mass without gaining a lot of fat. Any suggestions on what I should eat throughout the day would be greatly appreciated!

Also, I have read a couple threads about taken dextrose with their protein shakes. Is this an additional powder added to the protein? Also, what is the best liquid to mix the protein in? I have been using milk, but the label recommends water. This is 100% whey protein from GNC btw.

Are there any supplements you would recommend I take?
