die faster

i naturally dont really put on too much fat easily and its pretty easy to get off, but i want to avoid cutting all together. i think i can do this with a better diet while bulking.
so far im thinking - oats(not as much as i was, 6 cups a day in the blender) pears, bananas, apples, grapefruit(too low?), brown rice(kind of hate brown rice+fills me up too much), whole wheat pasta
what about milk? i always thought lactose in milk was all sugar but after reading gly. index charts it says its very low gly.(27)
sweet potatoes i never understood, i always thought sweet foods meant sugar, which meant higher glycemic.
the only thing i know about fats really is that olive oil, fish oil, and nuts are healthy fat sources. any other good fat sources? which ones should i avoid? im thinking of switching all my ground beef to ground turkey.
also what about cheese? good fat source or no?
