I counted 12 eggs which is around 12 carbs; in turn, this would be a fine ratio for CKD. Just don't get sick of eating too much eggs. To tell you the truth, I love eggs, I do something similar sometimes when I get sick of protein shakes/Flaxseed oil. It's a good way to add solid food to your diet; just remember: you need to take some fiber supplement because the fiber in the diet you've listed is slim to nill.
I had a buddy who would (hold onto your hat) buy and crack up to 50 eggs a day, throw away the yolks and eat scrambelled whites. He has OCD, so I guesse he did this for quite a while. He screwed up his stomach and no longer eats eggs.
If you can afford it I'd suggest buying Omega 3 enriched eggs. That way you won't have to worry about getting your EFAs and since you love eggs so much you'll get plenty.
They usually say something like "Omega 3 enriched" or something about vitamin E. The carton usually has some information about the hens being fed only vegetables I believe. They tend to cost around 2.50 or so.
Only if you're eating them raw...i think once you cook them the avidin (a protein that binds to biotin) is denatured and so you don't have to worry about that anymore...
