I gotta jump in and give Texans a shout here. I never had eaten smoked anything until I moved here, now I have a $1,000 smoker in my back yard. For a back yard smoker it is pretty nice. Brisket, sausage, slamon, chicken and even turkey.
Buy a boneless turkey and throw it on the pit for four hours (2 unwrapped/2wrapped) Now that's some vittles.
Also, Marinade salmon filet in salt, brown sugar and water overnight. Then put that shit on the BarBQ with a mesquite fire on the end. once again 2 hours unwrapped then 2 hours wrapped in foil. All four hours you baste it in brown sugar water every 15 minutes or so. Best salmon you'll ever eat!
