Waiters have to pay 8% on what they sell here in my province. So if Joe sold for $2000 last week, then the Revenu agency will take 8% of it no matter what the actual tip was.

I was told 15% is assumed for tax purposes in the US (could be bullshit, never checked) and they don't benefit from the minimum wage.

But, How many people actually know what waiters make if you are not associated with someone in that business. Most blacks work in the kitchens and bus tables in my part of the country and I can tell you they don`t know about the wait staff pay because it doesn`t apply to them personally.
