Couldn't have said it better myself. That is exactly how one should approach this.
 
It basically comes down to retricting calories to your BMR (which, if yours is anything like mine, is ridiculously low - 2300 cals a day with cardio everyday). I've been there (calorie level) for 2 years now and its very easy now.

I'm still in the phase where I want to add some more quality mass. I know how to adjust calories based on BMR, but maintaining that whole <10% is a lot of work, not to mention I'm always hungry and lifting heavy is tough to do then.
 
Oops, should have read down your post and would have seen this "Especially how they can do that and build any real mass at the same time." I dropped this philosophy a long time ago and focused on maintaining what I had/staying cut. When trying to gain mass I always just became fat! So I guess my final answer is - I don't know. :)
