About my weight going from one extreme to the other.

i think your breakdown looks fine, but it depends more on what the food is, more than a ratio. Get around 1 to 1.5 g prot per lbm. About .5 g of fat per lbm and then make the rest carbs or a mix of all 3. I think your fats are right on. just keep good carbs and good protein and make sure that you get plenty of efa's (esp. Omg. 3's)
 
After taken all that stuff, I weighed just over 14 stone (about 201lbs), only to find out that I lost most of it through the night like always.

I sure something isn't right.

I had my window open and it was raining outside, I had my fan on right by my head and I was cold. I sleep with all this thinking that I would not sweat over night. I was cold so I could not possibly sweat. Once I fell asleep, I then woke up about 2 hours later with every thing wet including myself. I was soken. I was dripin with sweat. Is this natural? I did have over 3 litres of water, so is it just the water causing this or is it something else?

Also, I have never really calculated my calorie intake, but I know that it is definately above what I should be needing, which is about 2000 calories as I weigh 198lbs and I am male and about 5ft 10ins.
I am the same weight as you and eat 4500-5000 cals to slowly gain.
 
That's alot of calories. I had reached nearly 3200 calories a few days back and it took me nearly all day to reach that by eating and drinking every 20 minutes to half an hour.
