WTF am i doing wrong with hard boiled eggs?

i put them in the pan then add cold water. cover it and bring to a rolling boil, then i remove from heat and let sit for 15 mins. BUT they dont peel for shit. the ones i got made for me fucking peeled perfectly. i add salt too but WTF!!! how do you guys do it so they peel easy

maybe because they're not hard boiled if they're only exposed to the rolling boil briefly. If you put them in while the water is boiling, they need to be in there for at least 9-10 minutes. If I start them with cold water I put the flame on high and set the timer for 20 minutes. It takes 8-10 for the water to start boiling and than another 8-10 for the eggs to become hard boiled. Once the water is boiling you can lower the heat and the water will still boil, but the eggs HAVE to be exposed to boiling water for at least the above mentioned time period for them to become "hard". I do like soft boiling them every now and then, 6 minutes EXACTLY when you introduce the eggs to the boiling water.......
 
Because you are putting them in the water first then bringing it to a boil. Bring the water to a boil FIRST. Then place the eggs in the boiling water.

oh i forgot that was cool? WTF ok so the eggs i used to get made for me. i was making a point that if they can make mass quantities come out perfect what am i doing wrong. some of you people are fucking annoying. i dont go in threads and write bullshit like that. i can see by your 50 thousand posts you have no life
 
You have to hit them hard and roll them between your hands under running water while peeling them. Once you break that thin skin underneath the shell, the entire thing will peel right off with very little effort.

I've had to take breaks from chat for years at a clip (no exaggeration). When it gets to the point where it harms more than helps, then it is best to just step away.
 
proper way to make perfect hard boiled eggs:

add eggs and cold water to pot. put on high heat and bring to a boil. then let boil for 10 mins.
remove and soak in cold water until cool. they should be a perfect yellow yolk color, if you have green at all on your yolks, you have overcooked them.

that's pretty much it right here, pretty simple.
 
I dump mine in a colander and run cold water over them after the boiling. Crack and roll them on the chopping block or whatever.

the eggs can crack if you do this.


I always put them in cold, and bring the water to a boil then let them sit in there for 12 minutes on boil, then take them out. They peel fine for me.

Okay, sorry but nobody has answered this guy's question. He's cooking them just fine, maybe overcooking (i.e., greenish yolks) actually as long as their covered with 1" of water eggs only need to sit in the hot water for 10 minutes.

The problem is FRESH eggs that are hardboiled don't peel well. Has nothing to do with the peeling process or salt or cold water or anything. If the eggs are fresh the membrane sticks to the whites and the shells don't come off.

Buy eggs as close to the expiration date as possible, ideally, less than a week, they peel like a charm. Hardboiling adds to the shelf life so they won't spoil before they're eaten.

My parents owned a bar where we served pickeled eggs so coupla times a week I had to hardboil eggs and put them in the pickling juice after peeling them.

If you hit them hard and roll them between your hands under cold running water then peel them under the water I promise you, there will be NO DIFFICULTY getting a clean hard-boiled egg out of the shell.

I've never tried that way because I hate wasting that much water and I don't want to deal with eggshell in the sink or down the drain.

The "older egg" method doesn't require water, in fact half the time you can take the shell off in one giant strip after cracking and rolling on counter.

thanks. im gonna try the new method on the eggs tomorrow -i guess i was undercooking them. im just sick of scrambeled eggs so i thought id switch it up a bit

Ever try them soft-boiled? Takes me back to childhood. My hubby brought me cute little *eggy-cups and spoons* to cheer me up.
