This is all the salsa I ended up making, a total of 52 jars of which 2 did not seal so they are in the fridge along with some I held aside.....I've got some salsa to eat up. All in all, a pretty good result.....

OuuChefWide said:Or... warm the salsa to about 150 degrees F in a deep saute pan and add some room temperature small snapper filets. Use enough salsa to just cover the filets. Make sure the filets are REALLY room temp, you may have to warm them a bit, one 10 second zap in the microwave will usually do the trick if they are a little too cool. Take the pan off the fire and let sit for 20 minutes.
Voila. It's dinner time.
