A "cutting" diet can be done many different ways, primarily driven by what is your goal. If it is to just get down to a good maintenance level then that is fine. You would mostly just stop the cutting process at whatever is your maintenance level and then ease back into a maintenance diet until you need to kick in to whatever is your next goal. If you are looking for competition cutting, that basically just carries the cutting cycle longer and optimizes it.
As far as cals, I've never really done a " bulking cycle" but a "cutting cycle" for me, keeps me still at around 1500-1700 calories, but with absolutely no cheats, VERY CAREFUL w/ the fats (i.e. cashews destroy my diet and leave my digestive system backed up for 2 days) and CARB CYCLING. So I never end up starving myself, but rather rely on carbs to set up an optimized burning rate.
You should spend some time researching "carb cycling" -- see what you can find on line. There are several different ways to go about it, but you might find some good education if you do the search yourself for starters.
