If you can't get the guy on the phone, go to his house when you are sure he will be there. If you can't do that, talk to an actual attorney practicing in landlord/tenant law to see if you might have a case to demand your deposit back. Have him draft a letter.
If you want to be like gladiator and ignore good advice, then I suggest just chalk it up as an $800 lesson learned in the school of hard knocks (which is actually still very good advice). With your new job you'll make like twice that in one shift, so let it go. You're wasting time and energy dwelling on it and doing petty things that he barely notices and doesn't care much about.
