If it helps, you would not likely be at risk for HIV or other blood-borne diseases. HIV viruses die extremely quickly when exposed to oxygen outside the body, even when still in blood. There have even been theoretical concepts of "HIV-screening" blood by cycling it through a sanitary fountain where it would be exposed to air and then returned to the body to kill the virus.
So at worst, we're talking about bacterial infection from the same environment as meat, but not viral infections.
I doubt gangs would bother you, either. They have no retaliatory motives against the cleanup guy. And you'd be the LAST person anyone'd try to mug.
Think of the job as disgusting, but generally safe. Then figure out what to tell people you do for a living.
