Help with protein pancakes

The inside of my pancakes is always mushy. Here's the recipie I use, taken off of this board:

1/2c ff cottage cheese
1/2c quick oats
5 egg whites
1tsp imitation vanilla
4 Splenda

I cook them on the 4-5 setting, and the outsides are dark golden brown, but the inside is still mushy. What do I do? Turn the heat down and cook longer? It still tastes good, but I'd rather not have it mushy. Thanks for your help, this is the best recipie ever!
 
Have you tried pressing down on them while cooking? Try squishing them a bit(like cooking a hamburger).

Here's how I make my protein pancakes and they turn out delicous. It makes one big pancake

ingredients:
1c oats
1.25c egg beaters
1/2c NF cottage cheese
6 splenda
few sprinkles cinamin

Blend everything together in a a blender or food processor. Porr into a 12" pan coated with Pam and set the heat and medium-low. Put a lid on the pan and cook for approx 8 minutes or untill the top of the pancake sets. Flip the pancake and cook the other side a couple minutes without the lid.

When its done, sprinkle 6 more splenda on top, along with some cinamin. Tast like cinamin powdered sugar.

These pancakes are soo friggin good, been making them for a while now, almost everyday. Bout 55g protein, 60g carbs, 6g fat.
 
JG1 has your answer- I like your recipe too(minus the cottage cheese for this lady!)

Blend it all into a puree. It should thin it out enough for you to be able to cook it through. Add a bit of water to it if not!

How do you all eat cottage cheese? Stuff is enough to gag a maggot. YUCK!

Trust me on this one, you don't even taste the cottage cheese in the pancake. My GF makes me make this pancake for her (half the recipe though) at least 4 days a week, and she hates cottage cheese....you can't taste it at all.
 
Very true. You can only tastes the oats. It's like an oat pancake pretty much. I put sugar-free syrup on it (ONLY Smucker's brand! All others taste bad) and roll it up. mmm-m good!

And I can eat cottage cheese outta the tub. I think it's good.
