I would really HATE to see you quit before even starting. You've tried all these diets & look where they've gotten you, ~2lbs heavier and feeling like a failure.

Based on some on your posts, and I'm going off No salient medical concerns here, I gather you are not (or were not) eating enough. You need to be consuming at least 10 x your bodyweight ... if you weight 140 = 1400 cals a DAY spread out over 5-6 meals, with GOOD carbs, GOOD fats and quality Protein. If you have problems with meals & eating alot of meat, get a good protein shake as a meal substitute, but eat often, every 3 hours. Get that metabolism running as it should be. Your body is holding on to everything you're eating b/c it's NOT enough ... so what better to store for the starvation it thinks you're putting it through than FAT ... in the meantime, it will happily eat up any muscle you do have.
You need to lift some weight. Not pink Dumbbells or light rack at the gym for 20 reps not allowing you to break a sweat. 8-12 reps of a weight that will make that last rep difficult, while not cheating or breaking your form. You will NOT get 'big' unless you're using drugs to make you that way ... it's simply not in your cards & genetics. What have you been doing to make your knees swell??
There is no quick fix that is healthy for YOU. This is a lifestyle change. One I think you will benefit & be happy from. Yo-yo dieting will not work, you need to learn to eat, to lift and you CAN have alife while doing and enjoying the foods you love to eat... in 'moderation' ...
Please don't give up.
