Critique my new "clean" diet please!!

Ok...I'm really trying here. Revamped my diet from when I posted a few weeks ago. I'm 5'8" about 125 lbs (not sure of BF though). I'm thin but do not have the muscle definition that I would like. After reading through many posts on this board and a few others, I am now totally confused on the whole cardio issue and the best way to get lean. I hear so many different ways to go about it. I know that when I try to do 60 min a few times a week...I feel like crap. I actually feel more jiggly (if that makes sense) when I do this. Anyway, this is what I'm doing now so if anyone can offer some help I would really appreciate it.

Monday: Legs
Tuesday: Tri's and Chest, 1/2 hour cardio
Wednesday: 45 minutes Cardio
Thursday: Back and Biceps....maybe 20 minutes HIIT cardio
Friday: Shoulders....30 minutes cardio
Saturday: 30 minutes HIIT cardio or 45 min. moderate
(stomach exercies mixed in there about 2-3 x/week)

Diet:
7am 3/4 cup oats
10am 2 eggs/1yolk, 1 small apple
12:30pm 3oz tuna mixed in with some brown rice and salsa and spinach
3:30pm rest of tuna
6:30pm 4 egg whites(or some kind of meat) and veggies
9:00pm protein shake
