Ate some Moose last night.

No not a super plumper(sorry hammy)

My friend just got back from a moose hunting trip in Alaska and invited me over for moose burgers last night. Damn that shit is good, without a doubt the best burger I have ever had.

On a side note my nickname since the fourth grade has been the moose so it was like eating my spirit animal or something.

Moose is excellent! I was fortunate to have my best gf's growing up having a dad who was in the DNR. They had moose at their house all the time. It's not gamey at all.

I LOVE bear. I know a lot of people aren't keen on it but marinaded and grilled it's one of my favorite things to eat (other than lamb).

I haven't had bear, but Lamb is great.

I also like:
Deer
Elk
Rabbit
Frog Legs
Rattle Snake
Alligator

Since most people will never try those, they can take my word for the goodness of them all.

Hell yeah bor!! I live up here in Alaska so I get it all the time. Best damn meat there is!!

I've had Elk, Frog Legs and Alligator...all good stuff.

You can get a mean Elk sammich at Cabelas.
 
I've seen a lot of moose knuckles before, but never on a moose.
 
rattlesnake - it all depends on the size of the snake. If too small, the pieces are too tough.

Some bear meat isn't that great. The carnivorous ones taste like shit and the meat is tough and grainy. The ones that are berry & fish eaters though aren't too bad.

Another tasty but simple way would be to season it with some pepper, garlic salt, and Lowerys. Roll it in a flower/corn meal mix and fry it in olive oil.

Another thing to try to preserve more of the natural flavor of the meat is this.

Spread a small amount of butter on one side ofthe steak then season with salt and pepper. Turn grill up to high and sear the buttered side while putting butter and salt and pepper on the other side. Flip and sear when done. Turn heat down to low and cook each side for a few minutes flipping alternately until your desired level of cooking. Remember to pull the steak slightly before your preferred level of cooking as some cooking will continue after it is off the grill. This way you can achieve even well done meat without losing the tenderness and juices of the meat.

Although with game meat I don't suggest going past medium well as with the low fat content it will dry out easily.

Shadows suggestion is great I just prefer the natural taste on good pieces of meat instead of the marinated infusion.

I've had rabbit, pigeon, frog legs, ostrich and kangaroo. The last two are very lean meats.

I sometimes shoot rabbit for our ever-slowing dogs. We had one rescue dog that had lost all her teeth except for the two lower canines so I had to make a hole in its torso so she could suck the insides out. She loved it, bless her.

Ostrich is VERY good! There's a restaraunt up here that makes ostrich breakfast burritos. :p
 
Hey Blut, Scotsman, have you ever had Partridge? I got a buddy that goes on and on about them...is it any good?

Nope never partridge, but I like most foul so I would assume its good.

And Ostrich is very good too.

Same here, never tried partridge.

We have a few deer farms around here so venison sausages are a popular choice at the local butchers.

See if you have an exotic meat store listed in you area. Around here there are some ostrich farms so it isn't too hard to find. Maybe try asking at the local butcher shop(not one in a grocery store) and see if they know where to find some.

My craziest meat story comes from a visit to Oz.

In Melbourne there's a huge market called Victoria market. On my first day there I was with my wife and we spotted a meat stand. After two or three minutes of drooling at these choice beef cuts, way better than anything I'd seen in our supermarkets, we'd almost chosen a slab when I looked up and saw the sign saying "meat for pets".
