Pork is better than beef.
Main reason: It is easier to digest. Red meat putrifies in the human intestines as it is long and not short like that of a carnivore. I speak of this in the nutrition chapter of "God Gave You a Brain; Use It!". I do not go into scriptures at all and I really don't care what a Bible says about pork versus beef as we have our modern-day understanding of them. You can have lean pork just like lean beef. If either one of them is undercooked you can get trichinosis. Nutritionally, they are similar, but the major difference is more vitamin B12 in beef as it's a red meat and the beef is tough to digest. The average American might have 4-5 pound of undigested beef in their intestines at any given time.
Two site for which you can make a fair comparison of similar cuts of pork and beef:
(well just search for them as I am unable to post two relevant sites)
