so yesterday, I made meatballs

a HUGE pot, cause my son has his enormous friend over.

I used fresh parsley and oregano from my garden, italian sea salt, pork, beef, and veal.
They came out great.
I made sandwiches (hoagies for you strange people) with fresh mozzarella on top, melted. The boys and the rest of my family loved it.

then i left the pot of meatballs out on my counter all night and forgot to put the rest in the fridge. :(

I would have eaten them anyway ... assuming your house was a/c and they were covered.

they were covered.
I don't have AC, but it's still chilly here. i mean, it was probably 60 in the house overnight.

i didn't throw them away yet- i put them in the fridge first thing this morning, but I'm not sure if they're good.

You have tomato in them right?? the acidity should take care of almost anything, if you are that worried, let the friend try it 1st..

jk.. they should be fine..

I think the sea salt would preserve them in that temp for that amount of time.

Butt, I like living life on the edge :evil:

Ok so I have some time!!

I was actually all stoked to make waffles last week then I found out I don't have a waffle iron (thought I did). That was disappointment at a major level.

i used to have one and lost it somehow.

i love waffles. can you make them with pancake mix?

Waffles rule! I'm not sure, my dilema is that I have waffle mix and am not sure if it will make pancakes since I do have a griddle.

they're still good. i'd still eat em. i do the same once in a while with pizza or spagetti.

i thought i'd serve them for dinner, but i'm alone and probably not going to eat anyway.
 
Use the nose test, if everything smells fine, just reheat them through good and hot. Drown them in some Italian gravy and bring the whole thing up to a good bubble.

It would be different if you'd left raw meat out overnight then no question, but cooked food I wouldn't worry about at all.

You could have sent them to smurf and she would have fed them to her coworkers

Your herbs are already grown enough to use? Mine are still so tiny

I just planted a week ago, but I have awesome homemade fertilizer. All natural too- i only grow organic.

I planted two kinds of lettuce, basil, oregano, cilantro, parsely, 4 or 5 tomato varieties, snap peas, zucchini, cucumbers, watermelon, red peppers, cauliflower, carrots, garlic, 2 blueberry bushes, and something else I can't remember.

it's so easy.
usually, you can find the meat mixture already packaged in the grocery store, but I was making a lot so i bought one package of all three meats.

mix in good salt (use kosher salt if possible), ground pepper, red pepper flakes, chopped garlic to taste, onion powder, and either fresh or dried parsley, oregano, and basil. Mix in some bread crumbs and grated parmesian, and some water, and 1 or 2 eggs.

I mixed it well, then put them on an oiled baking sheet and put in the oven (i have a convection oven. it cooks faster). turn after 10 or 20 minutes. put in sauce.

Oh, I love it. I love to garden.
Pure cilantro is a herb that takes metal (like mercury) out of the blood.

I too have 4 diff kinds of tomato, peppers (red and yellow), and tons of herbs, I live in the city so my garden is not huge.
My dream is to have a huge garden.


oh and, homemade fertilizer.....hahahah! I know what you mean but it sounded funny ;-)

I'm no expert at all- don't even own a book about it, but I refuse to use chemicals.

I also garden organically. It's the only way to go
 
odds are they are still good. Lets say you took them off the stove and they were nice and hot over 165. you put them on the table and it took prob about 3 hours for them to hit the temp danger zone of below 141 and above 41. cooked foods other then eggs can last a few hours in this temp zone. The fact that they were in sauce makes them last even longer. Meet balls in sauce can prob last a good 6-8 hours in the temp danger zone.


I will say this there shelf life will be a lot less now. Eat them with in the next 3 days.

You realize that children's tastebuds aren't that refined, usually? They probably would have just as eagerly eaten Chef boyardee as your delicious home made ones that you slaved over....lol.

no, mine are refined.
i mean, to a point. My daughter knows good sushi vs. the stuff I can get from the grocery store.
my son wouldn't ever eat canned pasta. BLECH.

he would, on the other hand, eat 7 whoppers in one sitting though.

lol...your kids probably have more experience with good food than most kids, then. I remember loving chef boyardee ravioli as a child. Egad!
