The penalty for accidentally killing livestock on various ranches in S. Texas is $4 - $5 a pound. And you don't get to keep the animal. It's pretty hard to hide the accident. Ranchers work their cattle everyday, and a headcount can be tallied on an EOD basis.

I would leave it and get the hell out of there. by the time the farmer finds it (unless it is in the pasture) it will be all bloated and he wouldn't be able to tell how it died anyhow.

as for the shooting, get the fuck outta there as you never know if he would try and screw you over but if you felt bad mail him an anonymous letter explaining, and if you feel REALLY bad some money for the value of the cow.
