Packing sucks!

My company is tight and I can only bring my two carry ons. As they are using my checked items for trade show stuff. My question is what happens if my carry ons are to full? I mean the one is a purse it will fit under my seat no biggy, but the other is a stander carry on. I am worried more about when I come back as of course I am going to do some shopping in Vegas. So my Q is what do they do if your carry is overpack?
