Depends on what you like and have in the fridge.
The last one I made had Monterrey jack cheese, vidalia onion, scallions, green and red pepper, mushrooms, left over chicken and yukon potato (cut up small).
I dice everything saute in the a oven proof frying pan (not a small one) onions and veggies first take out, do mushrooms, take out (I usually just nuke the chicken and taters till lukewarm) then mix everything but the cheese together in a separate bowl. Season everything as you go as you desire (I like salt, pepper, parsley and cumin)
Take 6-8 eggs and some milk or cream beat well, fluffier the better. Wipe out the pan very well, you need to put oil in the pan so it won't stick a fair amount on the bottom of the pan.
Take the egg mixture put it in you'll see the edges bubble, add everything and the cheese give it a light mix (top with parmesan if you like).
Now put it in the oven at 350 degrees - 30-40minutes (just check it to see when it's done my oven is wonky).
When it's done put a large plate on top of the pan and flip carefully.
Voila done.
Good leftovers and tases great cold.
