Prepare your food the day before and label it with the next days date. Then just make sure you get it all in during the day. It doesn't need to be spread out - meal frequency during the day has been proven to have no effect on the net result of a diet. So you don't need to spread it over 4 or 6 meals. Just eat when you can and get it in. But the biggie is preparing it the day before. It's easier to get calories in when the food is ready to eat.
