Maybe you're restricting calories too much?
500 cals below your maintenance and some extra cardio and you should have no big issues. At least I never really do.
as said earlier instead of cardio you can decrease rest time b/w sets to 60-90 seconds. I had been training dc for 4 months or so and now I went back to a volume routine w/ 60secs bw sets and its killing me, started to diet for summer as well and Im already seeing results w/o cardio
When dieting, althought the weights are still pretty heavy, I cut the total sets down as I know I dont have the same abolity to recover. I also agree with cutting rest times down, that almost makes it like cardio with weights
