theres probably millions of shrug variations. rack pulls/dealifts, and cleans work well also
 
Dumbell shrugs if you have dumbells that heavy. Deads don't get my traps nearly as sore as shrugs. I do t-bar rows for the lower traps too.

Personally, the only work my traps get are from bent-over rows.
