Can someone please share with me the secret to hard boiling eggs. I'm not retarded, I swear. I can boil em, but half of the eggs I have to throw away. I start to peel them, and either the egg comes apart and stick to the shell, or I can't get that freakin film that's between the egg white and the shell to come up. It makes it a bitch to peel the eggs when they don't cooperate. Someone said something to me about cold water, but I don't really know the specifics. Anyone? Thankya!
 
Put 'em in cold water and bring to a boil for 20 minutes (some prefer a short amount of time). Only put enough eggs in the pot to cover the bottom of it. Don't stack them. You want to prevent breaking into some that have a half cooked yolk. I would get sick from almost, but not completely cooked eggs a couple times a year before making sure I never ate any undercooked eggs. Once 20 minutes has passed, dump the hot water and fill it with cold water or put them in a pot with cold water if you've got more to boil. I do believe this is what is recommended to help improve the peeling. Leave 'em in there until they cool down and toss 'em in the fridge.
 
I got this tip off of an Emeril shows and it works.

Place eggs in cold water and put on burner
Bring eggs to a boil and when water starts to boil let eggs go for a minute or two in boiling water.

Then trun burer off and let eggs sit and cool on the burner. Once the eggs have cooled a bit(15minutes) they should seperate very easily.

What up Ver! Thanks for all your help fellas, I tried the cold water trick last night and it worked perfectly! Thank god, no more wasted eggs!

there was also a trick with vinegar in the water....

but I can't remember what exactly it was :confused:
 
This question rolls around every few months or so....VERIZONIZER HAS STATED THE BEST METHOD....:)

Poke a very small hole in the large end of the egg. Cook like you normally would and set in cool water. The water that seeps into the hole while cooking will help separate the membranes.

Older eggs are easier to peel due to their increased air cell within the egg during the aging process. Eggs with higher pH's are easier to peel.

This is an old post, but I'll share my technique for cracking the eggs. I hit them on the inside of the sink or on the table and roll them all the way around. Then, under running water, each half of the shell comes off easily. After doing about 5 eggs this way you'll get the hang of it. I can take the shell off in about three seconds. Sure as hell beats picking the little pieces off or breaking the egg entirely. I hope this helped at least somebody.

HA! I have been pissed off before while cracking hard-boiled eggs that just didn't want to comply with me... I have ended up smashing many eggs in the sink in frustration.

or just eat the whole egg with its shell
it's good, it's calcium carbonate :D
