When I was in NY the calzones were hand food, the ricotta filling was nice and stiff and you could eat one while walking. Once you get out of the tri-state area, the calzones have that runny deli-style ricotta filling, and you have to eat with a knife and fork, and they always serve with a side of tomato sauce. You never see tomato sauce anywhere near a calzone in NY.
