interesting, for me it actually works best in a pan the size of the omelette
Well you have two common omelets. The half omelet in which you cook off a circle off eggs, place the inside of the omelets on one half then fold it over.

Once it has been folded over its the shape of a half circle and thus "half" the size of the pan it was cooked in.
Than you have your folded omelets which is the way I like them made. They look much more appealing, you can garnish them better and do a lot more with them when it comes to presentation.

These can only be mad with A griddle or grill and a Chef Spatula.
