I'd consider omelettes my breakfast specialty. I load 'em up with everything I can fit sometimes; sliced/shredded cheeses, ham, fried hot dog pieces, mashed potatoes, green pepper, salsa, sour cream, sometimes cream cheese in the yolk mixture. Other times just a cheese omelette is good.
Depends on the stove type but on electric I cook on medium, always butter the pan regardless of non-stick cookware, and use a spatula to peel away the egg around the perimeter once it starts cooking a bit. Tilt and rotate the pan to let the runny egg slide off the surface around the underside. When the bottom's cooked enough to slide freely I flip it, turn the heat down a bit and add all the innards. Fold it closed and slide it off onto a plate...mmmmmm. Hell yeah. I've cooked enough eggs over the years I can't remember the last time I used two hands to crack one. I credit Rocky Balboa for the inspiration there haha.
I used to love eating breakfasts like these-
-four pieces of toast with butter and strawberry jam, six egg omelette with the works and 3 thick ass pieces of buttered 'n microwaved banana bread.
*edit* this reminds me of one of my fondest cheat days. Two dozen eggs in one sitting. I think I fried 6 with toast, made on omelette with another six and scrambled the last dozen with cream cheese. Might've made some eggs Benedict with cream of mushroom soup for a few though, tough to say.
