A variation on a previous dish....Gluten free, battered Pacific cod and sweet potatoes. This time though, I cooked up portabello mushrooms in a butter/balsamic vinegar reduction along with some Dijon braised brussel sprouts. Yumm...Recipes available upon request.

Question for ya - I love to cook but I keep my meals mostly quick/simple. Your recipes & pics look pretty amazing but how long does it actually take you to cook these?

Prep & cook time total? I'd love for you to tell me that took 35-45 minutes.

I toasted a few pieces of ezekial break with almond butter and ate 2 cups of scrambled egg whites with salsa

haha. yeah regular wolfgang puck here to, just finished up 4 boiled eggs with creole mustard. vanilla greek yogurt desert...

dave, how do u do that batter? looks pretty fantastic bro. and by the way i tore up that beef stoganoff recipe the other day. awesome shit even with my fat free sour cream :supercool
 
Thanks folks. Just got up and having coffee (had a wonderful LATE evening with my wife...its great being "empty nesters" again...heh). For now, gotta get ready to tend the garden, but I'll answer the questions in a bit.

This meal took me about 1 hour start to finish. The brussel sprouts added considerable time. If it was just the fish, mushrooms, and sweet potatoes...35 minutes start to finish.

Glad you liked the stroganoff. Its always a "crowd pleaser" over here no doubt.

As for the batter...its all too easy.
3/4 cup rice flour
3/4 cup corn starch
1/2 teaspoon cayenne
1/2 teaspoon paprika

Thoroughly mix dry ingredients in a ziploc bag and then into a bowl. Add one beaten egg and begin adding sparkling water until the batter is the consistency of a thick pancake batter. Coat the fish and fry about 2-3 minutes on each side.
