Post diet Blues

When i was a teen i was pretty big but since i had access to the uni gym and started eating good and trained harder in kick and thai boxing i lost all the weight and though my bodyfat is really low i still have a layer of fat over my abs and a but on m ychest. I've been told this isnt actually fat but skin and i've also been researching and found it could be excess adipocalytes or something in adipose tissue which generate to store extra fat and although they can shrink in size they cant dissapear. If this is so am I doomed never to see my abs (which I can feel just can't see)
if this is true how is it that you see people go from fat to slim but have great definition (like in body for life althoug even I dont trust all the pics)

Thanks
