I'm throwing in with Scorpio here, the school needs to be informed. Ideally have a doctor backing you/providing a note. If her guardian has to call the school's Principal or dean and explain things, so be it. This is a medical issue.
In terms of fiber, don't forget things like ground flaxseed meal, too ... good EFA sources, like flax oil or hemp oil, are VERY critical to health. Hemp oil and hempnut seeds are some good, high calorie, high EFA food. Dumping a tablespoon of hempoil and 2 tablespoons of hempnut seeds into 1/2 c. of cottage cheese and eating that with some cooked meat is a very satisfying, high calorie snack.
For "carry around" snacks, I prefered hardboiled eggs, individually wrapped cheeses, and nuts when I was doing atkins. If she's enjoying the slimjims it really would be better to get a dehydrator and make your own jerky, just read the ingredients you'll see why I say that (added sugar and other dreck). It's not just a matter of going keto, she ideally should go very clean with her diet too, but add in things like really healthy fats (coconut oil, another blessing) to maintain/bring up her weight healthfully. I don't like soy, I don't think anyone with PCOS should use it. Fruit still has high sugar content. Once in a while may be fine, but for now fruit, fuit juices, sugars, honeys all need to be deleted ... and I know how hard it is, I've done it, it sucks. I did the yeast diet for three months last year The ONLY sugar I was taking in was about 8 to 12 ounces of plain (not from concentrate) orange juice a day. But I didn't see improvement in my condition until I cut THAT out. It was unspeakably boring. But thinking of food in terms of fuel for the body, a tool for overall health as opposed to a pleasure ... it's just food, you eat it to survive. On the plus side I have learned to change my attitude toward food.
There are a lot of internet support groups out there, too. She's not alone, there are many other people out there who face similar battles, just most of them are starting a lot older or are dealing with the challenges for their children. There are epileptics who follow the keto diet, and parents of autistic children, as well as diabetics and women who face PCOS.
Really look into those books I mentioned, Detox or die is a real jewel, it might help her. The protocol isn't hard. Just adding in the detox cocktail has been a major help for me.
