Polish, I do not understand your desire to "max out" bodyparts. Is this just for this week or do you want to "max out" which I guess means "train to failure" every week?
If this is indeed what you mean then do a search in "CNS" and "failure." You will learn a lot.
As far as the question by back I assume you mean upper back. I see lats as the complimentary muscle to the pecs and erectors as the complimentary muscle to the abs.
That said Pull Ups would be the way to go. Weighted if you can do more than 12 unweighted.
