The skin is yummy. I have to admit I like it when it gets crispy when it's roasting.

Some people put all the seasoning on the skin, too, which means if you don't eat the skin, the chicken has no flavor.

I shove lots of seasoning between the skin and the meat. The meat is so much better that way.
 
oh yeah! and ever since i switched from fat limitation to carb limitation (a few years back) i can eat the shit till it's coming out of my ears :)

thats why u get one and inject it then roast it
 
It's gotta be really really dry and crispy otherwise I'm not interested.

That said, I haven't had chicken in a while I've been living on ground turkey.

You dont have to inject it. Just fill the cavity with herbs, an onion half, citrus, celery, wine or whatever you like. The flavor will infuse throughout the bird.

i know i know......but i got an injector a few times and you put that juice in there raw and cook it and its good
