How much is enough ?

How many times a week should you work out each muscle group? Also how many sets per group? My workout routine now is monday chest and tri's- 12 to 15 sets each. Example 5 to 7 reps x 5. Then tuesday backs and Bi's. Wednesday rest. Thursday shoulders legs. Friday or Saturday A medium weight full body workout 6 - 8 sets per body part. CRITIQUE ME.
 
I do full body HST 3 days a week (MWF) and olympic lifting on the "off" days. I hit each body part 6 days a week. Except for a month of 5x5, my weights are all up. I believe frequency should be a minimum of 3 days a week, you just need to keep the volume low and never go to failure. I always stay at least a rep short. I also think it's good to alternate exercises i.e., Monday bench & rows, Wed. dips & chins etc.

I am cutting this cycle and eating at what I thought was maintenance, I definitely cut calories though, and I gained 5 pounds in a few weeks. I believe it's because of the increased frequency. I never do more than 3 work sets (usually only 2) and only one with deadlifts which I only do on Wed's.
