I'll start:
I have a big cut on my right big toe and am recovering from surgery on my right elbow.
I mainly do crunches, lying leg curls, and leg extensions. Also, there is a piece of plywood at the gym where I work that is about 3/4" thick and about 2'x1'. I stand on that with my toes hanging off the front and do squats with the Smith machine.
I also do curls and military presses (sometimes all in the same movement, curl->Arnold press) with just my left arm. My left side is slightly weaker anyway so if I do that once a week for a few week it won't hurt anything I'm pretty sure.
I swear it sucks. But you know what would suck worse? Not going to the gym at all.
I try not to sweat too much because of the cut that's healing on my toe, so I don't do cardio. I think starting the middle of next week it will be healed up enough that the idea of walking around the locker room barefoot won't completely skeeze me out and I'll add some cardio to the routine (I think my legs are on the verge of being overtrained LOL).
How are YOU coping with YOUR injuries/conditions?
