I would do the pb diet but my only concern is I would stop making gains or lose muscle due to the lack of carbs after my workout. Am I just misinformed or will protein plus fat work out ok post workout? Don't you need carbs to get out of the catabolic state?

I would suggest against doing a low-carb diet when trying to gain mass. The low-insulin would not allow for sufficient muscle gain - but if you got into ketosis the muscle loss would not be an issue.
exactly how much would adding just post-workout dextrose to the anpb or ckd diet change the effectiveness of it? would it totally kill the diet.. would it help with muscle maintainance??

If you add pw carbs you have to take the calories out of either fat or protein, so there is no magic ratio of the "kill" rate of the diet. I suggest if you do it, make sure the cal. stay the same at least.
