Atkins-approved veggies?

Could someone please refresh my memory about which veggies - if any - are kosher on Atkins? :confused: I know that meat, eggs, cheese, cream, and oil are fine, but I've been doing my own veggie-heavy lowcarb diet so long, I forgot what Atkins calls for specifically. (A little back story: I have people visiting from out of town in 10 days who are on the diet, and I need to impress the hell out of them with my cooking. Not easy to do sans lasagna and chocolate cheesecake.)

Is broccoli okay? Eggplant? Cabbage? Cauliflower? Green bell peppers? Green beans? Spinach? Zucchini? Small amounts of ginger and garlic for flavor?

If you're unsure of what's allowed, you can try hitting up his website and checking out his carb-gram counter....

Sorry I can't help beyond that... I read the book a few years ago and even then I'm not really a fan of veggies.
 
Yup, been there, thank you. I've never shied away from meat and cheese in cooking, the problem lies in substituting fibrous veggies for what starchy carbs would normally add bulk to a recipe, like pasta, tomatoes, or potatoes.
 
I found this list Ceebs...I didnt see savoy cabbage on there but I know its ok on Atkins, its very good, I eat alone and use it as lettuce wraps for chicken and tuna etc. the leaves are prime for using like a tortilla, just wrap from the sides of the leaves not top to bottom (if tht makes sense).

A serving of these salad vegetables has 10% or less of your daily carbohydrate limit. Therefor you can eat up to three cups of these without worry.

be careful with the cheese, because a lot of cheeses contain a few carbs.
