I do chicken thighs all the time. Much better flavor than breasts.

you can always stick a chicken breast in the oven with some tomatoes, cheese, olive oil stuffed in for about 50 minutes at 360 degrees on a baking pan .. really easy. then add in some veggies and brown rice and you have a meal that simple.
