I'm not a woman, but your head is in the right place bro! Anything that shows you put heart and thought into the gift instead of throwing money at something that she could just buy herself at anytime she wants is priceless for her! Think of things that she wouldn't be able to receive without your heart and love behind it...I'm sure you are an intelligent man...you will think of something!
Create a DVD using photos of her, your girls, her mom...and you of course bro
...and put one of her favorite songs in the background while it goes through the photos like a slideshow...and watch her eyes fill with tears because you took the time and energy to create it! Even have your girls help you choose the photos if they are old enough to help...just an idea off the top of my head

edible arrangements are pretty awesome...the contractors kept from getting yelled at for like a month by sending me one...and I was ready to fuckin burn their place down

that is a great idea you got there, very nice and heartfelt, also try to take a task off her hands that she's been needing to do or gift her something she's been meaning to buy but hasnt made the time or whatever.

The pics are a great idea. A spa day is always appreciated. If you can leave the actual treatments up to her, so much the better. Another thing I would love is the promise of an evening to make me forget I'm a mom. Something really sexy and special, whatever that means for her.
I don't know how old your girls are, but something handcrafted by them is always much appreciated by every mom, I think. Or a firm date set to get a bunch of stuff checked off the "honey do" list. Or a promise of a day that she can use however she wants, whether a romantic day with you, or dragging you to the mall to watch her try on outfits, or a family day, or a day by herself, or with her best friend . . . Tickets or plans to attend something you normally wouldn't go for--a musical, play, music concert that's not your style . . .
I'm not particularly materialistic and I'm really picky and hubby is not good at figuring out my tastes, but many women do like some money spent on them. Jewelry is nice, and something simple and classic works for just about anyone.
