Sitting down to eat my 9:30-10:00 a.m. meal and I'm dining on two chicken breasts that were grilled out last night, a small baked potato and 1 piece of whole wheat bread. Back to the chicken though, first, I mix together some 1 part lemon juice to 3 parts water and I let it soak in that solution for about 30 minutes. Basically this just seals in all of the juices. You can not taste the lemon after it's cooked, but, the meat is just succulent and moist. Then, right before throwing them on the grill over the charcoal, I put some nice chunks of hickory chips/wood that were soaked in some water. So, with the coals blazing and the hickory smoked smell rolling out of my webber, after about 20 minutes on the grill, then it's time to put on my favorite barbecue sauce, gates sweet and mild. Hmmm. I just re-heated this in the lunch room and am now sitting back in my office and everybody thinks I'm an asshole because of how good it smells.
