where does kickboxing fit in

I enjoy kickboxing during off days from weights.

It's aerobic and anaerobic exercise.

Make you stronger physically and mentally.

Might depend on the actual class too. If it is a more "boxing" based class, with boxing drills, it might be mroe like interval training. But if it is more "boxing aerobics" class then it is likely a regular cardio workout.

Best thing to do is really monitor how you feel during the class. If you feel like your heart rate is in a steady state the entire cless, it is more like regular cardio. If you gets intense periods, followed by "cool down" type periods (heart rate goes up and down in predictible manner) then it is more like interval training.
