It is GULYAS - pronounced "goo-lyahsh" the a is ahhhhhhh like as in the doc telling you to open wide.
Gulyas in Magyar means cowboy - yes, we have cowboys too.... or cattlemen. It is beef soup made by cattlemen. LOL
Generally you put either potatoes or "csipetke" (little dough balls) literally meaning "to pinch". I like the csipetke even though you have to stand there for an hour throwing this shit into the pot one at a time. LOL I tried making them with whole wheat flour instead of standard white flour. It DID alter the taste, was granier but for me, it would be acceptable. If my girls were here, I would bite the bullet and make it traditionally. Very simple soup. You only need beef, water, marrow bones, carrots, onions, salt, pepper, (hot pepper if you like) and lots and lots of magyar paprika. But when it is made properly - OMG IT IS FREAKING GOOD!!!
