Sweet Potato pie recipes

Here's one I made up myself.

Ingredients:
4 large sweet potatos
1 quart of eggnog
2 tbsp of brown sugar
1 tsp mulling or pumpkin pie spice
1 tsp cinnamon
1 box graham crackers
1 stick of butter
1 pie pan

Optional:
Whip cream, marsh mallows, or ice cream.

Pre-heat oven to 350 F. Take four large sweet potatos and cut them up into 1/2" discs. Put them in a baking dish. Add enough eggnog to cover the pieces then add in a couple of tablespoons of brown sugar and the spices. Put the dish into the oven and cook until the potatos are soft. While the filling is cooking crumble up enough of the graham crackers to cover the pie pan. Melt the butter and add to the crumbs until you get a paste like consistancy. Pack the "paste" into the pie pan and set it in the over for about 5 min. Take out the pie crust and set it aside. When the potatos are soft remove them from the oven and mash them. Scoop the mixture into the pie crust and put it back into the over cover for 10min then remove the cover and monitor the pie. When the top starts to darken remove the pie from the oven and let cool. Cut serve and add whip topping or ice cream or you can set some marsh mallows on the pie in the last couple of minutes in the oven to melt over the top.

I hope I got this right, I had to call a friend who spewed this to me really fast over the phone.

2 eggs
1 can 16 oz. yams
3/4 cup sugar
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. cloves
1 2/3 cups evaporated milk

Heat oven to 425. Prepare pastry. Beat eggs slightly by hand. Beat in remain ingred. Place pastry lined pie plate on oven rack, pour in filling- Bake 15 minutes,reduce oven to 350. Bake until knife comed out clean approx 35 minutes.
***For a 9 inch pie***
 
I'll haveta get the recipe so I wont have it till later but I do know of a healthy(ish) version

I don't know a healthy version, but I have a kick ass southern recipe. :worried:
 
There is this place in GrapeVine that we frequent called "The Tap Inn" and they make THE BEST sweet potatoe fries served with this creamy cinnamony dipping sauce...

Sweet pot pie

CRUST
3/4 cup flour
1/4 cup + 1T. Whole Wheat flour
2 T. sugar (splenda?)
1/2 t. salt
1/2 t. cinn
1/4 cup veg oil
3 T. cold water

FILLING
2 lbs sweet pots cooked ; peeled ; mashed
1 1/2 cup skim milk
1/2 cup egg beaters /whites
1/4 cup sugar (splenda?)
1 tsp. vanilla
1/2 t cinn
1/2 t brandy
1/8 t ground mace

1. Wisk flour ; sugar ; salt ; and cinn

2. add oil ; work fingers till course dough forms ; stir ice water 1 T. at a time until soft dough forms, gather in a ball and wrap in plastic, chill at least 1 hr

3. Oven 400

4. Place dough between 2 sheets of wax paper, roll 9 inch crust ; transfer to pie plate ; press to form rim and refrig while making the filling

5. combine filling ingred. in large bowl and spoon in crust

6. bake 10 min @ 400 then reduce to 325 - bake till firm (about 80-90 min)

1/12 pie = 190 cals ; 5g fat ; 32g carb ; 3g filber (with regular white sugar)

If you are having company I would try this first before serving to make sure you like it - its a good pie, but probably not as good as the other recipes here - and when I have company I dont make the healthy version of anything. lol

Not strict healthy or anything but lighter than some.

ON a side note: IF you want to reduce those carbs a bit, use LIQUID SUCRALOSE(rather than the Splenda) and SOY MILK(rather than the skim).

Just an idea.

BJ's (like a costco) has a great pumpkin pie around the holidays - I buy that all the time.

i liked BJ's in Jacksonville, but over here in Pensacola, we have neither BJ's or CostCo so I have to settle for Sam's.

1 (9-inch) unbaked pie crust
3 egg whites


Cream the sweet potatoes with an electric mixer. This will produce a smooth, creamy pie with no lumps.
Preheat the oven to 350 degrees F.

Filling:
In a large bowl, combine the potatoes, 1 cup of the sugar, butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk, stirring until well combined.

Pour the mixture into the pie crust and bake for 40 to 50 minutes, or until a knife inserted into the center comes our clean. Place the pie on a rack and cool to room temperature before covering with meringue.

Meringue:
Using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar, 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue mixture on the pie, forming peaks. Make sure the meringue touches the crust all around.

Sprinkle with a pinch of sugar. Bake for 5 to 10 minutes, or until delicately browned. Cool and serve.

We went to the Tap-Inn for eats the other day. Of course, I HAD to have the sweetpotatoe fries... and DAYUM but they were good... like always! ;)

Bri and my sweet stuff LOOOOOVE when I make bake sweet 'tater fries.

Easy really. Just slice 'em and spray a cookie sheet with cooking spray, drizzle a bit of olive oil with cimn. and slenda atop of 'taters and bake in a 400 degree oven til they crisp up.

Would you prefer white or red?

I was a big chardonnay, pinot grigio, sauvignon blanc person myself. But have lately been very much enjoying merlots and cabernets.

I rarely drink, and I don't ever drink wine. The one time I did drink wine was at my buddies house, and I didn't plan on drinking, but his wife offered me some wine so I said what the hell. Two bottles later I was f'd up sitting on the couch with some chick I didn't even know, rubbing her god damn stinky feet :worried: .

You're the expert. Bring what ever you like.

I bought my husband a wine fridge for his birthday. It's filled with some wines that a few net pals told me to try. It's sad to say, but most of that wine is still in there. I've had a few glasses, but I guess it's a required taste and I'm NOT getting it. Our pals have enjoyed the selection though!

I'm not much of a drinker to be 100% honest.

"low fat" is just bullshit posturing used to get horrible chemicals into anorexic whores.
